Fluffy Waffle Goodness

On the rare occasion that S and I are both off work on the same day and have a free morning, we enjoy making breakfast at home.  This past week I decided to try a new homemade waffle recipe, because I was out of the old box mix, plus homemade is always better for you, right?  We like to think so... :)

The recipe is as follows: 
Fluffy Waffle Goodness
Servings: 6

Ingredients:
2 Eggs
2 cups All-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil (I used light olive oil)
1 tablespoon unbleached sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Directions:
Pre-heat your waffle iron to medium (about level 3).  For this next part, I found is simpler to use my stand mixer instead of dragging out the hand mixer.  Beat eggs in large bowl with beater until fluffy. Beat in flour, milk, oil, sugar, baking powder, salt and vanilla, just until smooth. 
 
Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown.  Serve hot with your favorite maple syrup or homemade strawberry syrup! 

We sure did love this recipe and will add it to our book of family favorites!
